Power Balls

Makes 25 balls

  • 1/3 cup dried goji berries
  • 1/3 cup hemp seeds
  • 1/3 cup shredded coconut
  • 1/3 cup raw hulled sesame seeds
  • 1/8 cup chia seeds
  • 1/8 cup wheat germ
  • 1 cup granola
  • 1 cup toasted pecans, chopped
  • 1/2 cup almond butter
  • 1/2 cup brown rice syrup
  • Pinch of fresh grated nutmeg
  • Pinch of sea salt

Place goji berries in a food processor, and blend until berries are broken down to a powder. Transfer berry powder to a large bowl, add hemp seeds, coconut, sesame seeds, chia seeds, wheat germ, granola, and pecans. Use your hands to gently combine. In a small pan, heat brown rice syrup and almond butter over medium heat. Bring to a boil for 2 minutes, stir to break up clumps. Mix in fresh grated nutmeg and sea salt. Remove from heat, and continue to stir for 1 minute. Slowly add syrup to seed mixture; stir with a large spoon. When the syrup is cool enough to handle, and mixture is clumping, use your hands. When mixture is evenly moist, form small bite-sized balls, pack firmly, and set on a platter to cool. Once cooled place them in snack bags with zip tops, and store them in the freezer. When you need them it only takes a couple minutes for them to soften up. Power balls are perfect for hiking, biking, or breakfast on the go.
